Recipe: Cilantro Power Soup

This recipe is a raw soup, so no cooking involved, which is (a) easier and less time consuming to prepare than a hot soup, and (b) better preserves the nutrients of the ingredients.  And when we’re talking about cilantro, there are a lot of nutrients to preserve.

The word cilantro is actually Spanish for the word coriander, and is what we typically call the leaves and plant in the Americas. Cilantro is also sometimes referred to as Chinese parsley. The entire cilantro plant is edible — from the leaves to the stems, roots, and seeds — and both the plant and the seeds are used extensively in cuisine worldwide.

This is for good reason –  for in addition to having a flavor that is a nice mix of parsley and citrus – cilantro is a rich source of dietary fibers, and high in vitamins K, A and C and in minerals such as magnesium, iron, potassium and manganese. The leaves and stem tips also contain antioxidant polyphenolic flavonoids, and the plant has anti-inflammatory properties to boot.

Combine this plant powerhouse to the likes of garlic and raw nuts or seeds and you can imagine just how much your body will thank you!

INGREDIENTS:
2 small bunches of cilantro or one large bunch
1 clove of garlic
Juice of 1/2 lemon
1 cup of raw walnuts or raw pumpkin seeds
2 Tbs of garbanzo miso
1 Tbs flax, hemp or essential balance oil, or half an avocado
2-3 cups water
Optional: Top with avocado cut into cubes, scallions, or any soaked seeds as a garnish

DIRECTIONS:
Add all ingredients to your blender and blend until smooth.
